Drying Ginger by Hot-Air Circulation

Drying Ginger by Hot-Air Circulation

The available thermal energy to the working fluid for the incident solar radiation is calculated in the first step of the model. A single component boiling model is used in the second step to calculate the working fluid's boil-off rate and therefore number of moles of working fluid in each phase at an instant. As the accurate thermodynamic property estimation is essential, Peng-Robinson equation of state is used for this purpose.
In this work, a mathematical model to describe heat and mass transfer during the biomass drying process in a hybrid solar dryer combining a water/air heat pump and a solar air collector is proposed. This mathematical model will be able to simulate the moisture extraction rate and the specific moisture extraction rate during the biomass drying process. The approach used is mainly based on the energy performance evaluation under different operating conditions. Drying is a process of removing water from foodstuffs and is characterized by simultaneous heat transfer and water movement. During the drying process, there is loss of nutrients and the sensory characteristics of the samples inevitably change, so it is necessary to select an appropriate drying method based on the different characteristics of the samples.

Zerumbone has been reported to suppress NF-κB activation induced by a variety of stimuli, including tumor necrosis factor , cigarette smoke condensate, and hydrogen peroxide . Zerumbone was also reported to suppress receptor activator of NF-κB ligand activity in mouse monocytes by inhibiting IκBα kinase activity, phosphorylation, and degradation (Sung et al. 2009). Oral administration of zerumbone to ICR mice decreased inflammation and the multiplicity of colon adenocarcinomas induced by intraperitoneal injection of azoxymethane (AOM, 10 mg/kg BW; Kim et al. 2009). Additionally, zerumbone effectively suppressed 4--1-(3-pyridyl)-1-butanone-induced lung adenoma formation in female A/J mice (Kim et al. 2009). This ginger derivative appeared to exert its effects by inhibition of proliferation, induction of apoptosis, and suppression of NF-κB and heme oxygenase expression in both colon and lung cancer tissues (Kim et al. 2009).
Since then, we've been careful to keep sweet and savory foods separate, with good results. There are a number of sources that say you can mix and match even strong flavored foods in the vacuum chamber, as long as you put the strong flavored food on the top shelves. If you have cut the ginger, you will need to pat it dry with a piece of kitchen paper before storing it. This will not keep as long as an intact root, so try not to cut it up until you want to use it.

Ginger components are suggested as a potential new class of platelet-activation inhibitors without the potential side effects of aspirin, which is most commonly used in this approach. In a comparison of gingerols and analogs with aspirin, ginger compounds were found to be less potent compared to aspirin in inhibiting arachidonic Continous Ginger Slice Dryer acid-induced platelet release and aggregation and COX activity (Koo et al. 2001). However, several analogs had a significant inhibitory effect, suggesting that further development of more potent gingerol analogs might have value as an alternative to aspirin therapy in preventing ischemic heart disease (Koo et al. 2001).
However, the VD (60 ± 2℃) method may be the best option for drying A. Roxburghii plants because it can preserve the original color and appearance of the plants and also results in a desirable aroma. Most importantly, it maintains the active ingredient contents of A.

The tests were performed at 95% confidence level with p-value equal to 0.05. Various research works have been focused towards increasing the drying rate through the use of thermal storage system , auxiliary heating devices [, , ] and porous collector and recycling of the exhaust gas . The ginger powder processing line can be equipped according to the user's requirement and the production demands. In modern India, ginger is widely cultivated and marketed as a dried spice, and India has a predominant position in ginger production and exports.
This paper provides practical guidance for optimizing the process of yam slices using heat pump-EHD combined drying. Three drying methods, including far infrared drying, infrared convection drying, and ultrasonic pretreatment assisted far infrared drying, were adopted in the drying of ginger slices. The effects of main parameters on the drying kinetics, energy consumption, and color change were investigated and discussed in detail. The results showed that the drying process of ginger slices was controlled by falling rate period. For far infrared drying, the drying rate increased with the increase of infrared temperature and decrease of sample thickness, while the infrared power had no obvious effect on the drying process. The infrared convection drying showed the fastest drying rate and the smallest color change, however, the energy consumption was the highest.
It is proposed that administration of ginger may exert abortive and prophylactic effects in migraine headaches without any side-effects. On the other hand, solar drying is an alternative solution to preserve high quality agricultural foods . The direct dryers indicate that the product is exposed directly to the solar radiations . This comparison shows the temperature of solar dryer inlet–outlet temperature with natural and forced convection air circulation.
If you know you'll cook the ginger in medallions, you can peel it, cut it up into a medallion shape, and then place it a glass bowl or another freezer-friendly open container. Place it in the freezer until the ginger is completely frozen, turning over the ginger after an hour to speed up the process if you like. Then, place the ginger in an airtight container and seal it.

Let’s explore how ginger is dried in a simple and easy-to-understand way. Another idea is to produce sweet or savory  powdered ginger flavors. If that’s your final product, you should store it in foil laminate packs for protection and long product life. You can manufacture highly concentrated powder or natural powder flavors and deliver them in quantities your client requires.
The maximum thermal efficiency was evaluated as 60.04%, 41% and 33.3% for an airflow rate of 0.006 kg/s, 0.004 kg/s, and 0.002 kg/s respectively. Thermal enhancement with a maximum outlet air temperature of 110.6 °C, 91.4 °C and 80.2 °C was recorded at a mass flow rate of 0.002 kg/s, 0.004 kg/s and 0.006 kg/s in glazed conditions. Furthermore, the research includes an estimation of the energy cost per kilowatt-hour , which amounts to $0.017, $0.025, and $0.0311 for mass flow rates of 0.006 kg/s, 0.004 kg/s, and 0.002 kg/s, respectively. Our ginger drying equipment is using inverse cano principle, absorbing heat air and transferring them to the drying chamber to realize the increase of temperature in the dryer. Our ginger dryer is composed of compressor, heat exchanger, flow controller and heat absorber, and these devices form a cycling system . Under the action of compressor, the refrigerant will be flowing circulating in this system.
The fresh rhizomes are soaked in water overnight after which the outer peel is carefully removed using a knife or a peeler. They are washed again and then sun-dried on mats or barbecues for around a week. Natural convection – In natural convection type dryer the products only dry by direct and diffuse radiation. In this type of dryer we will not use any external source to dry the product like solar air heater , . Drying of ginger usually leads to loss of volatile oil by evaporation and this loss could be as high as 20 % during sun  drying (Mathew et al. 1973).
